Pam's Caramel Corn
You will need:
roasting pan or aluminum roasting pan
saucepan
1 stick of real butter, not margarine
5 quarts of popcorn--it's best if it's bought at the store already popped
1 cup packed brown sugar
1/2 cup white Karo syrup
1/2 teaspoon baking soda
waxed paper
To Make:
1. Put the five quarts of popcorn in the roasting pan
2. In saucepan, melt the butter, mix with brown sugar and the Karo syrup. Bring to a boil, then remove from heat and add 1/2 tsp. baking soda.
3. Pour mixture over popcorn. Mix.
4. Bake uncovered at 250 degrees for 15 minutes, then stir. Repeat this two more times.
5. Pour out onto waxed paper to cool
Makes 5 quarts
Melody's note: This caramel corn is the highlight of the Christmas baking for my family. The popcorn is lightly covered, buttery and disappears quickly! ^_^
