John’s Hominy Vegetarian Chili
You will need:
2 - 16 oz./454 g. cans of chili beans with sauce
1 - 15 oz./425 g. can of diced tomatoes
2 - 15 oz./425 g. cans of hominy
1 - 5.5 oz/163 g. can of V8 juice (optional)
1 small onion, diced
1 or 2 cloves of garlic, or to taste
salt if needed
large kettle or crock pot
a pinch or two of red pepper flakes (optional)
To Make:
Mix all ingredients in a large kettle or crock pot and simmer until it's hot and ready to eat.
Can be served over cheese quesadillas. (put Mexican blend cheese in a tortilla, fold in half and either fry in vegetable oil or microwave until the cheese melts)
