John’s Mock Duck* (or Fri-Chik**) Pot Pie
You will need:
8 ounces of fresh mushrooms (or small can of mushrooms--if using canned do not sauté)
butter
large frying pan
large casserole dish (such as a lasagna pan)
one 10 ounce can of mock duck (or Fri-Chik)
approximately 1 pound of red potatoes, peeled and diced to 3/4 to 1 inch pieces
paring knife
2 stalks of celery, chopped
2 packets of vegetarian gravy
carrots (optional)
large bowl
Bisquick or other biscuit mix
1/2 cup of frozen peas
1 small shallot, minced
To Make:
precook potatoes approximately 7 minutes in microwave, set aside
put some butter in frying pan, when it melts add mushrooms and celery. sauté
add shallot, sauté until translucent
make gravy according to the instructions on the packet
in the baking dish, mix gravy mix, peas (and carrots, if using), potatoes
add mock duck (or Fri-Chik) including the liquid
bake at 350 degrees F for 30 - 45 minutes
make Bisquick according to the dumpling recipe on the box
spoon biscuit mix dough onto the top of the baked mixture and bake till it's "golden brown and delicious"

* mock duck can be obtained at any Asian grocery store; sometimes it's available in the supermarket
** Worthington's Fri-Chik (vegetarian chicken substitute) can sometimes be found at supermarkets; it is available through the Adventist Book Centers and Amazon.Com
