John's Crispy Spinach Tortilla Pizza
For each pizza you will need:
1 1/2 cups of fresh spinach
To Make:
Using low heat, sautee the mushrooms, garlic and onion in about 2 Tbsp. olive oil
Add spinach. Cook until the spinach is rendered down to about 1/4 of the original amount and the moisture is evaporated.
Spread approx. 2 Tbsp. pizza sauce on a tortilla. Add sauteed veggies, top with mozzerella cheese.
Bake at 350 degrees till tortilla is crispy and cheese is golden and bubbly. This recipe works really well in a toaster oven but a conventional oven can be used.

one thin slice of large purple onion, chopped
approx. 2 Tbsp. olive oil
one tortilla
Pizza Quick Sauce or other pizza sauce
grated mozzerella cheese
4 large mushrooms, chopped
1 clove of garlic or garlic powder to taste
salt to taste
a cookie sheet
